I will use two speed controllers, one for each track motor. However, I won’t have RC inputs. I use an Xbox360 controller and relay the stick’s position to my vehicle in a WiFi packet. I will know that the stick is “80% forward and 30% to the right”, but I need to translate that information into the direction and speed information for the two controllers ?

Does that make sense ?
