I have considered doing it for my tank, got 2 scooter motor (brushless with integrated speed control). The speed is controlled by a 5k variable resistor, for reverse I'll inverse the signal on the hall effect sensor, this does the trick to reverse it... still trying to find a digital potienmeter to go all digital instead of using a servo, but there is no 5k ohm parts out there, only 1k, 10k, 50k, and 100k for theses chip, there is still other way of doing it... 

for a regular dc motor, as long that your variable resistance don't take the load, that it is only a feedback for a control circuit.
