There are actually quite a few Electronic Speed Controllers that will work fine for 100-125 lb tanks:
 
Vantec - these are extremely robust Dual ESC's that are widely used by the robotic community.  If you shop carefully on Ebay, you might find a good one that will handle 60 amps per side for maybe a few hundred bucks.  All of the Vantecs have built in mixing function so you don't need a fancy radio to achieve tank style mixing. www.vantec.com
 
IFI Robotics Victor 883:  These are single ESCs that will handle 60 amps continuous.  New they are $150 each, but again if you stalk Ebay (or the Combat Robot forums) these come up all the time for around $100 each.  You'll need 2 of them and you'll need a radio that does mixing (or you can buy a separate mixing board for about $35) www.ifirobotics.com
 
The Robowars IBC: This is a well tested Dual ESC that will handle 50 amps per side.  Built in mixing function.  Price is $290 new.
 
Personally I would never try to homebrew an ESC. This thing is the heart of the tank.  I've seen many homebrew designs go up in smoke during a combat match. 
 
Yes- they tend to be expensive if you buy a commercial one.  But having magic smoke coming out of your machine isn't a lot of fun either!

what's that other BIG speed control for like $300 that some are using
