That's easy, actually.  Mount a control horn on the pot (or on a gear 
assembly attached to the pot, if you need more than 90 degrees of travel). 
Place the servo so that the control horn on it is pointed directly at the 
center of the pot control horn.  Connect with a control rod, and you're 
done.  Either way the servo turns, it will pull on the rod, so the motor 
will always speed up as the servo turns away from center.
