I think a forward-only ESC can be used with the addition of two circuits.

First, you need to put some discrete logic between the receiver and the 
ESC to invert the signal when the joystick is moved down.  This results 
in the ESC ramping from zero to max if the joystick is moved up or down, 
thereby controlling the speed of the motor in both directions.

Second, you need to put a polarity switching circuit, like a MAG Speed 
Control, between the ESC and motor to change the direction of the motor.

The part of the ESC circuit that handles the receiver input can be 
modified to provide both of these features (with lots of tinkering of 
course).

Might be worth contacting the designer and see if he's already designed 
a forward-reverse controller based on that design or if he's willing to 
take a shot at it.  At about $50 US per kit delivered, I think it would 
become a popular starter kit in the tank hobby if it proves to be a 
reliable design.
